Guwahati: Terra Mayaa, a vibrant bar and grill hotspot in Guwahati, Assam, is marking its 11th year of existence with a culinary extravaganza as it introduces a plethora of mouth-watering options as part of its new menu for the coming year.
Spearheaded by culinary virtuoso Viraf Lim Patel, celebrated for his contributions to several premier dining establishments, the menu promises a fusion of Northeast Indian ingredients seamlessly integrated into global cuisines.
"Drawing from my diverse culinary journeys, the menu at Terra Mayaa not only reflects my long association with European influences but also embraces global flavors”, Patel shared with Business North East. “The emphasis on small plates encourages shared moments, fostering a sense of togetherness and conviviality. Each dish is a visual and gastronomic experience, a testament to my commitment to ingredients and showcasing them in a unique dining experience."
Acknowledging the evolving culinary landscape in Guwahati, Chef Patel added, "As Guwahati is emerging fast on the national scene, we can see a lot of global food chains coming up, and we wanted to level up to compete in the market." The outlet has also introduced vegan food in the menu for vegetarians, the chef added.
The newly curated menu features innovative twists, such as the use of local products like kaji nemu (a variety of lemon indigenous to Assam) in tiramisu. Chef Patel says he has also incorporated other home-based ingredients like pineapple, cauliflower, and broccoli to create “a healthier fusion of food.”
The menu shall encompass cuisine from Asia, India, Lebanon, and Europe. While food items will have a starting price tag of Rs 350, beverages will set one back by Rs 400 and upwards.
Rachit Saboo, the Managing Partner and man behind the revamped beverage menu expressed his enthusiasm for the changes. "In our new menu, we have incorporated different techniques of modern mixology. We are only using fresh juice, homemade syrups, and tinctures to keep things fresh and unique. From glowing cocktails to whimsical flying helium bubbles, every drink is a celebration to give a wow impression.”
Terra Mayaa, located in Guwahati’s ABC locality, has been voted in the top 50 bars in India by a unanimous jury for three consecutive years.
