Guwahati: The Assam Agricultural University (AAU) situated in Jorhat has developed biscuits made from the elephant apple (known as 'outenga' in Assamese) that is presumed to have several health benefits.
The AAU's new line of biscuits is aimed at providing a delectable and nutritious option at a time when the market is saturated with lots of unhealthy options. "We are trying to address the challenge of finding snacks that balance taste and health, especially in a world where snacking has become a prevalent habit amid the fast-paced lifestyle", a university official said.
The official explained that traditional snacks often contain excessive refined sugar, salt, and unhealthy fats, contributing to various health ailments. As an alternative to this, the Food Science and Technology Programme under the Department of Horticulture at AAU has standardized a new range of biscuits that meets the criteria of being both delicious and healthy.
These biscuits are crafted using composite flour that incorporates the powder of elephant apples, a fruit renowned for its medicinal properties throughout history. Despite being a staple in traditional cuisines of the Northeast, the fruit faced limited popularity in the food processing industry due to its "challenging processing and low juice yield", as per the official.
The sour nature of the elephant apple powder can serve as an additive to curries and recipes, similar to amchur powder, introducing a novel trend for gastronomic enthusiasts. "Elephant apple biscuits boast a distinctive flavor that is both nutty and earthy, making them suitable for consumption by individuals of all age groups. They can be enjoyed as standalone snacks or paired with a cup of tea or coffee", the official added.
Highlighting the health benefits, the official noted that these biscuits offer 69% fiber content, surpassing conventional high-fiber oats biscuits or cookies. Increased fiber intake aids in preventing constipation, regulating bowel movements and reducing the risk of chronic diseases such as atherosclerosis, diabetes, and cancer.
Moreover, these biscuits are packed with antioxidants that protect body cells from damage caused by free radicals. Rich in minerals like potassium and iron, partly contributed by jaggery used as a replacement for refined sugar, these biscuits help regulate blood pressure, boost immunity, and prevent conditions like anemia.
The official mentioned a rising demand for elephant apple biscuits at a time when awareness about consuming local fruits and vegetables is at an all-time high in a post-Covid world.
"Their appealing flavor and health benefits position them as an ideal choice for individuals seeking a nutritious snack option without compromising on taste", the official said.
